Olive trees cultivation is the most traditional cultivation in our place. We have the privilege and blessing to have our olive groves in the same area where the olive tree was born, in the plain of the ancient Minoan palace.
Basically our family learned to grow and earn its livelihood through the cultivation, reaching today the point of cultivating approximately 10,000 olive trees which we also own. Our knowledge of the proper cultivation methods and the production of quality olive oil has been passed down from generation to generation by our great grandfather. Our love for the earth and our respect for the olive trees are proven by the way we cultivate them. We follow a water and sun-based method, without using any chemicals or other harmful process that would force the olive tree to produce more but would end up damaging it, as it is the case in countries where intensive cultivation models have been adopted (e.g. Spain, America, etc.).
We cultivate exclusively the koroneiki variety, the most widespread in Greece, which grows perfectly in the microclimate of our region. Koroneiki is a variety with small and oval fruits, which ripens early, has narrow lance shaped leaves and shows exceptional quality and stability. The variety does not have huge irrigation requirements. We water nearly half of our olive groves, as the rest are covered by rainwater and spring water, resulting in excellent hydration of the olive trees, which contributes substantially to the production of quality olive oil. The olive oil we produce has a unique fruity flavour, with a slightly piquant aftertaste that surprises pleasantly.
